All the Hot Sauce, None of the Gimmicks
No devils. No flames. No death threats. Just bold, balanced
Australian hot sauce for people who want flavour with their heat.
Every bottle is made in small batches in Melbourne, built around Australian native ingredients like Finger Lime, Davidson Plum and Kakadu. Six flavours, mild to wild. A promise for good flavour, every time.
Thousand Apologies is a pocket-sized rebellion against bland food and boring sauce bottles. We started with a simple mission: make really good sauces for capsaicin addicts like us. Then we turned up the heat, literally, with a near-unconsumable blend that proved just how many spice-loving sadists are out there.
No devils, no flames, no gimmicky death threats. Just bold flavour, sustainable packaging, and a healthy respect for those daring (or foolish) enough to try the hottest one.
- Blood Lime Scorpion Hot Sauce - Very Hot - Blood lime brings a deep, almost brooding citrus intensity. Think regular lime's mysterious older sibling who reads poetry and wears black. The scorpion pepper delivers heat that builds slowly, like realising you're falling for someone completely wrong for you. It starts sweet, turns complex, then hits you with a rush that leaves you breathless.
- Kakadu Jalapeño Hot Sauce - Hot - Combined with jalapeños and a little extra hot chilli to make it more interesting. This one is bright and super herby. It's the kind of sophisticated spice that makes you feel worldly just eating it.
- Davidson Habanero - Medium Heat - Australia's tangy Davidson plum takes the spotlight, giving it a punch of tartness. Add in bold, fruity Habaneros, a dash of ginger, and a touch of muscovado sugar, and you've got the perfect mix of kick and flavour for any hot sauce lover.
- Wattleseed Coffee Habanero Hot Sauce - Earthy wattleseed brings the nutty complexity, while coffee notes add depth without the jitters. Habanero delivers the heat that builds beautifully, and raspberry sneaks in with that "wait, what was that?" moment of unexpected sweetness. This isn't your average hot sauce. It's a bloody revelation.
- Finger Lime Jalapeno - Zingy punch from Aussie native finger lime, savoury touch from pepperberry, and the brightness of fresh jalapeños. Add in slow-cooked onions and garlic for an umami-rich experience. This isn't your average jalapeño hot sauce.
